No yeast? No problem. This tried-and-tested recipe only needs a few ingredients. Once you've made your sourdough starter, you'll be amazed at how quickly you can whip up a delicious, ready-to-eat pizza crust.

Making a Sourdough Starter

A natural sourdough starter is built using natural yeast in the air. It can take 7, 14, or even 30 days to build into a starter that's ready for baking.

Equipment:

  • 1 jar or container with a lid
    • Note – The jar needs to be 4 times the size of the mix you put in. A standard mason jar should be fine for holding your starter!
  • A rubber band or a string to mark the starter

Ingredients:

  • Flour
    • (Note - it's best to use hard red flour for your starter, but you can also mix it 50/50 with soft white wheat flour.)
  • Water

Directions:

  1. Day 1 - Mix 50g of flour and 50g of water.
  2. Mark the jar with a rubber band or string. This will tell you if your starter grows.
  3. Leave your jar on the counter overnight. Keep the cap on, but don't close it tightly!
  4. Day 2 - The next day, remove 50g of the mix and replace it with 25g of flour and 25g of water. This will "feed" your starter.
  5. Days 2 - 7/14 - Repeat this process for 7 to 14 days. The starter should double (or even triple) in size. This means it will have "bloomed."
  6. Once your starter blooms, keep feeding it. This could take anywhere from 7, 14, or even 30 days.
  7. Once your starter is at its maximum bloom point, it's ready to use to create a delicious pizza crust.

Making the Pizza Dough

Ingredients:

  • 1000g bread flour
    • Note - You can also use gluten-free flour, whole wheat flour, or all-purpose flour if you have them on hand.
  • 650g cold water
  • 30g salt
  • 100g sourdough starter

Instructions:

  1. In a large mixing bowl, mix the cold water and your sourdough starter with a wooden spoon.
  2. Pour in 10% of the flour and mix. Keep in mind that this doesn't have to be exact, but it acts as a barrier between the yeast and salt.
  3. Add the salt and mix.
  4. Pour in the remaining flour and mix until you've created a wet, shaggy dough.
  5. Transfer everything to a counter or dry work surface and knead for 15-45 minutes until you have a smooth dough. Stop kneading once you can touch the top of the dough, and it doesn't stick to your finger or pull away. If you have a temperature probe, you can also knead until the dough reaches 23 degrees Celsius.
  6. First Rest – Shape the dough into a large ball and cover it with the bowl, a kitchen towel, or plastic wrap. Rest the dough for at least 30 minutes at room temperature.
  7. Longer Fermentation - If you want a better dough, you can also bulk ferment your dough in the refrigerator. Take the dough, place it in a container, and leave it in the refrigerator for a maximum of three days before moving into the next step.
  8. Β After the dough has rested, you can divide it into dough balls. Place each dough ball at least two fingers apart on a deep sheet tray or proofing container.
  9. Second Rest – Rest until the dough balls have doubled in size and are touching, as this means they're ready to use.Β 

Assembling the Pizza

  1. Preheat the Oven - Set your oven to 425Β°F (220Β°C). If you're cooking with a pizza stone or pizza pan, don't forget to place it in the oven to preheat as well. Alternatively, prepare a baking sheet lined with parchment paper.
  2. Roll Out the Dough - Use a rolling pin or your hands and stretch out the dough to make it as thick as you want your pizza. (Don't forget - thinner dough will be crispier, while thicker dough will be chewier). You can also use your hands to push out the dough and manipulate it to the size and thickness you want.
  3. Prepare for Baking - Transfer the dough onto the parchment-lined baking sheet or onto the preheated pizza stone. Lightly brush the top with olive oil to help it crisp up.
  4. Add Flavorful Toppings - Now comes the fun part – adding pizza toppings! Once your toppings are in place, bake the pizza until the edges are golden and the cheese is bubbly.
  5. Serve and Enjoy - Remove your pizza from the oven and slice it up. Then, you're ready to enjoy your delicious homemade pizza!
